Ingredients: 2 c. of cooked red quinoa 1 c. unsweetened apple sauce 3 eggs 3 Tbsp. cornstarch 3 Tbsp. cocoa 1 tsp. cinnamon 1 tsp. baking powder 1 tsp. pure vanilla extract ½ c. sugar pinch of salt
Preheat oven to 400° F.
Spray an 8” x 8” baking pan with nonstick spray.
Blend the quinoa, applesauce, vanilla, and eggs in a food processor.
Combine dry ingredients in a large mixing bowl. Add quinoa mixture and mix well.
Bake for 25-30 minutes. Should be a moist, pudding-like cake. Let cool before serving.
